wfodave I like the idea of not being cured, but have zero faith in them staying below 40 degrees during the complete trip to the market. Honestly, I'd probably trust Costco more than others, but I have watched refrigerated trucks unload and see things just stacked outside while waiting to be brought in. One reason I gave up on Chipotle; you can't trust their entry level employees to be careful enough to take care of all their non-preserved food. It's not fun eating bad food.

- wfodave @laruetactical Absolutely. But by the time the meat has been processed and touched by more than a few people or machines, then it's chilled or frozen below 40. All still good. But then the delivery truck to Chipotle comes when it's busy and the boxes sit out too long, plus the time waiting to go on the grill, that's when it goes sideways.
